Nacho' Average Taco Pasta Salad

Listen here — this ain’t no bland-ass, cold noodle salad you find half-eaten at a sad potluck. Nah, fam. This right here is a TACO. IN. A. BOWL. Creamy, zesty, cheesy, and so disrespectfully delicious you’ll be standing by the fridge at 2AM shovelin’ forkfuls straight to the dome.
We load up tender pasta with bold Crowder Powder Nacho’ Average Taco seasoning, crisp veggies, beans, corn, and ranch — because ranch makes everything better, don’t argue with me. Ingredients (Serves 6–8)

12 oz rotini pasta

½ cup ranch dressing

¼ cup sour cream

1 ½ tbsp Crowder Powder Nacho’ Average Taco Seasoning

1 cup black beans, rinsed & drained

1 cup charred or canned corn

½ cup diced bell peppers
-
½ cup diced red onion
-
1 cup shredded cheddar
-
Chopped cilantro & extra Nacho Average Taco for topping (optional)
Instructions

Cook Pasta:
Cook rotini al dente according to box. Drain, rinse under cold water to chill. -
Make the Dressing:
In a big-ass bowl, whisk ranch, sour cream, and Nacho Average Taco Seasoning. -
Toss Everything:
Add cold pasta, black beans, corn, peppers, onion, and cheddar. Toss ‘til coated in creamy goodness. -
Chill & Serve:
Refrigerate at least 1 hour. Garnish with cilantro & extra seasoning before serving. -
Leftover Hack:
Stuff it in a tortilla for a cold taco wrap — trust me.
I recommend this as a side with some tasty mains - but you can make it the main dish by adding a little taco meat or grilled chicken. Let me know what you think!
