Nacho' Average Shrimp & Pineapple Tacos

Ingredients (Makes ~8 tacos)

1 lb large raw shrimp, peeled & deveined

1 ½ tbsp Crowder Powder Nacho’ Average Taco Seasoning

1 tbsp olive oil
-
1 cup fresh pineapple, cut into chunks

8 small corn tortillas
-
1 cup shredded cabbage or slaw mix
-
¼ cup chipotle mayo (store-bought or DIY: mayo + chipotle in adobo)

1 lime, cut into wedges
-
Chopped cilantro (optional, but come on)
Instructions

Prep the Shrimp:
In a bowl, toss shrimp with olive oil and Nacho Average Taco Seasoning until fully coated. -
Grill or Sear:
Heat grill or skillet over medium-high. Cook shrimp 2–3 minutes per side until pink & lightly charred. Grill pineapple chunks alongside until caramelized. -
Warm the Tortillas:
Char tortillas directly on the grill or stovetop — you want those sexy lil’ brown spots. -
Assemble:
Tortilla → slaw → shrimp → pineapple → drizzle of chipotle mayo → squeeze of lime → sprinkle of cilantro. -
Devour:
Fold, bite, let the juice run down your chin. Don’t trust anyone eatin’ these with a fork.
