Nacho' Average Shrimp & Pineapple Tacos

 

Ingredients (Makes ~8 tacos)

  • 1 lb large raw shrimp, peeled & deveined

  • 1 ½ tbsp Crowder Powder Nacho’ Average Taco Seasoning

  • 1 tbsp olive oil

  • 1 cup fresh pineapple, cut into chunks

  • 8 small corn tortillas

  • 1 cup shredded cabbage or slaw mix

  • ¼ cup chipotle mayo (store-bought or DIY: mayo + chipotle in adobo)

  • 1 lime, cut into wedges

  • Chopped cilantro (optional, but come on)

Instructions

  1. Prep the Shrimp:
    In a bowl, toss shrimp with olive oil and Nacho Average Taco Seasoning until fully coated.

  2. Grill or Sear:
    Heat grill or skillet over medium-high. Cook shrimp 2–3 minutes per side until pink & lightly charred. Grill pineapple chunks alongside until caramelized.

  3. Warm the Tortillas:
    Char tortillas directly on the grill or stovetop — you want those sexy lil’ brown spots.

  4. Assemble:
    Tortilla → slaw → shrimp → pineapple → drizzle of chipotle mayo → squeeze of lime → sprinkle of cilantro.

  5. Devour:
    Fold, bite, let the juice run down your chin. Don’t trust anyone eatin’ these with a fork.
